Best holders: eomuk-bokkeum (fish cake) and mild jeyuk-bokkeum with extra onion hold 4–5 days chilled and reheat in 90 seconds with a splash of water to re-glaze. They were designed as banchan that survives a work week.

Poor holders: squid and octopus bokkeum toughen rapidly; cook and eat same night. If you must prep ahead, pre-mix sauce and pre-slice seafood but do not combine or heat until service — mise en place ahead, fire at the end.

Bossam/suyuk cold holds well 3 days; re-slice cold, or warm slices 30 seconds per side in a hot pan with a lid and 1 Tbsp water underneath — steam-warm, not fry, to keep edges from crisping into the wrong texture.

Freezing advice is split: jeyuk freezes raw as marinated 500g portions (thaw overnight, cook fresh); eomuk-bokkeum freezes cooked and reheats decently; squid never freeze cooked. Frozen raw squid holds 2 weeks before water loss ruins sear — cook within that window.

Packing for dosirak pots with limited reheating: give eomuk-bokkeum and kimchi, keep a tiny ssamjang cup, and skip ojingeo for office lunch where microwave time is 60 seconds not a wok. Match dish to available heat.
